Mommo sent us home from Ohio with some huge zucchinis from her garden a couple weeks ago. When we got home I made chocolate zucchini cake (with chocolate chips, of course) and it was soooo good! With all the zucchini in it, it's like eating salad, right??? Than I cut up the other one and steamed it! It was so good served with fish and saffron rice. Yum Yum yummmy yum!

Glad you liked it! Looks so good and yes I believe anything with choc. chips in it qualifies as a salad. Yellow rice is one of Dad's favs too...I serve it with chicken. It's a southern thing I learned from Grandma Starkey.
Good old Ohio zuccini...you can't beat it!!!...especially when it's from Yaya's garden!!!
I'm the only one at my house who'd each zucchini. So sad!! I need to get some just for me. Or grow it next year and then we'll all HAVE to eat it. Yummy.... The cake looks delicious, but so does the fish and rice. Can I eat at your house tonight?

That sounds really good. I always think about mom's zucc cake, but I haven't made it. I love fresh zucchini and squash with lemon and garlic. Thank goodness for Adele-she shares fresh veggies and fruit with us.
